Okay - hands down these are the yummiest cookiest i have ever tasted and i never thought i even liked coconut. the coconut is very subtle so for those that were like me that weren't particular crazy about coconut, these cookies will shine new light on that idea. they are soft and delicious, and maybe it's the wannabee health nut in me/closet junk fiend, but i felt no guit eating them as breqakfast treats :)
